Abstract

The development of active food packaging using synthetic and plastic products causes serious health-related issues. Biopolymers have gained attraction in food industries due to their expansional properties such as nontoxicity, biodegradability, low cost, and renewability. Biopolymers are also superior in terms of properties such as antioxidant and antibacterial properties, which in turn enhance the long-term preservation of foodstuff. This chapter reviews the properties and food packaging application of marine-based polymers. The synthesis, properties, and application of three different biopolymers such as chitosan, carrageenan, and sodium alginate are explained in detail.
